Smoke, Spirits & Spice: A Culinary Journey to Oaxaca and Puebla with Chef Diego Campos
Some journeys are about discovering a destination. This one is about discovering where a chef comes from.
Join Chef Diego Campos, Head Chef of CAMP in Greenville, South Carolina, and Chef Richard Gruica, founder of The Gourmet Vacation, for an extraordinary culinary homecoming through Oaxaca and Puebla, timed around one of Mexico’s most beautiful, emotional and exhilarating celebrations: Día de los Muertos.
We begin in Oaxaca, where the streets come alive with marigolds, candles, music, Catrinas, comparsas, elaborate altars and mezcal. We’ll eat our way through markets and neighborhood kitchens, make tortillas alongside an abuela, meet textile artisans, discover Oaxaca’s printmaking and street-art traditions, taste mezcal where it is produced, and follow the music into the streets.
Then we hit the road toward Puebla, through landscapes of towering cacti and centuries-old salt works, tasting the seasonal Mole de Caderas with a local family before the monumental Día de Muertos altars of Huaquechula.
Diego comes home
In Atlixco, Chef Diego’s hometown, he becomes our storyteller: the streets he remembers, the foods he grew up with, the markets, farmers and cooks who shaped him. One evening, Diego takes over the kitchen for Roots: A Homecoming Dinner, created exclusively for our guests.
This isn’t Mexico viewed through the window of a tour bus. It’s Mexico around the table.
Optional Mexico City add-on (November 6 to 9)
Continue with Chef Diego and Chef Richard for three nights in Mexico City: Tacos & Tequila, VIP Lucha Libre at Arena México, Frida Kahlo’s Casa Azul with a private art historian, a Bugs & Beers market experience, Teotihuacan with lunch in a volcanic cave, and a farewell with mariachi at Plaza Garibaldi.

Art, Altars & Ancestral Flavors: Oaxaca Comes Alive
We begin with a hands-on printmaking workshop led by a local artist: design, carve, ink and print your own piece of Oaxacan-inspired art to take home.
Then, a private culinary tour through markets, local eateries and neighborhood stops: mole, quesillo, corn, chiles, chocolate and more. After lunch, a street-art tour reveals the city’s walls as an open-air gallery.
In the evening, a special introduction to Xandú, the Zapotec Día de Muertos tradition of the Isthmus of Tehuantepec, where the dead are welcomed home and reunited with the living.

Roots & Revelations: Mezcal Magic & the Gran Comparsa
Our day begins beneath the legendary Tree of Tule, famous for the stoutest trunk in the world. We meet artisans who turn plants, flowers and insects into brilliant natural dyes and weave with techniques passed down for generations.
At a sustainable farm we join an abuela for hands-on tortilla making, and Chef Diego joins in for a farm lunch. At a boutique artisanal mezcal producer, we follow agave from field to bottle and taste at the source.
As evening falls, Oaxaca transforms. We join the Gran Comparsa and follow the music, Catrinas, brass bands and marigolds through the streets.

In the early afternoon, a mezcal tasting at a favorite local spot explores agave varieties, regions and flavor profiles. Then a private Catrina face-painting experience with local artists. Wear black or darker clothing and let the colors take center stage.
Tonight we follow the music, the people and the energy: perhaps a neighborhood comparsa, a traditional muerteada or celebrations in the surrounding communities.

Maguey, Fire & Fermentation: The Ancient Flavors of Tlaxcala
We venture into neighboring Tlaxcala, where fields of maguey lead us into one of Mexico’s oldest culinary traditions. At a working hacienda we meet a tlachiquero, who harvests aguamiel, the sweet sap of the maguey, and follow its natural fermentation into pulque. And yes, we taste along the way.
Lunch at the hacienda brings fire, smoke and slow cooking, with barbacoa and mixiotes taking center stage, and Chef Diego in the kitchen with the local cooks.
